Frijoles is Spanish for ‘beans’, and ‘refritos’ means ‘rehashed’, or ‘refried’. You can also have a ‘refrito de cebolla y tomate’ which is a dish made of sautéed onions and tomatoes. ‘Frijoles refritos’ are made by soaking and simmering beans until they are tender, then mashing them and frying them in oil or lard and seasonings.
‘Refried’ is a misnomer – they are in fact only fried once. They can be served as a dip, or as a side dish to other Mexican or Tex-Mex dishes. Pinto beans are often used, but frijoles refritos can be made with other types of beans.
