'Bouchées' *(f) means 'mouthfuls' in French. 'Bouchées' are small puff pastry (pâte feuilletée) cases, similar to 'vol-au-vents', but smaller. After they are cooked, the soft centre is scooped out of these light pastry cases, and replaced with some sort of filling. Bouchées may be sweet or savoury.
