A Quick Overview Of Kir, Kir Royale
'Kir' is an alcoholic drink consisting of crème de cassis topped with dry white wine - traditionally a Burgundy. For a 'Kir Royale', the white wine is replaced with champagne. The proportion is about 1/4 cup crème de cassis to a glass of wine or champagne.
'Kir' is named for the mayor of Dijon during WW2, Canon Félix Kir. He was a priest, and he became famous for his opposition of the Nazis, and for helping numerous Resistance fighters escape. He promoted the drink by serving it to his guests.
